The name Chianti Classico, today identified by the famous logo of Gallo Nero (black rooster), is reserved to wines produced in the most antique origin area of Chianti.Produced in the hilly area of the provinces of Siena and Florence. It has a full ruby color and expresses sensations of ripe fruit and spices, morello cherry and anise to the nose. Good structure to the palate with light tannins and a final of cherry and sweet spices.
The alcohol fermentation takes place in steel tanks at a controlled temperature of 26/28 °C for 10-15 days of peel maceration using recovery techniques. Once the alcohol fermentation is finished the wine is poured into steel tanks where the malolactic fermentation takes place.
